Fettuccine Alfredo with stir fried chicken

I absolutely love pasta dishes. But since it is bounty in carbohydrates, I am not able to have it as often as I want to as it bloats me up like a balloon.  Anyhow, to award myself for fasting today, I made some fettuccine in Alfredo sauce and stir fried chicken. The Alfredo sauce was store bought as it was a tradition for me and my husband to eat Prego Alfredo Mushroom sauce pasta. It is not complicated to make this sauce either. I will try to write a post on how to make Alfredo sauce sooner or later.

Now, the first question that comes to our mind is why they call this sauce "Alfredo" I believe, that is for anyone who does not already know what this means.

I was curious myself during the first times I heard of this sauce and did a bit of googling too. To cut things short, this sauce is named after the person who brought this pasta to life, the man named "Alfredo De Lelio". The Pasta sauce is similar to any simple white sauce pasta originated from Italy. A little bit of butter and Cheese. You can read more about Alfredo Sauce origin here.

I love experimenting in the kitchen. This has lead to a countable number of disasters and countless number of heavenly dishes that got produced in my kitchen. Similar to this, I did some experimenting and made my own version of Fettuccine Alfredo with stir fried chicken. The total time to make this 20 minutes. 

Now as simple as a Fettuccine can get, you warm up the sauce and toss it in to well cooked fettuccine and add some parsley and cheese at the end.

My version which requires adding a bit more ingredients is as below. I am writing the ingredients in cooking order.


To make stir fried chicken

Ingredient


  • 1 chicken breast cut into medium strips. Make sure that the chicken strips are not damp with water. 
  • Salt and Pepper

Steps

Pat the chicken strips using kitchen paper or tea towel. Sprinkle some pepper and salt to the chicken strips to season. Gently massage the season to the chicken strips. Spray some oil into a pan. Heat up the pan to a medium level. Once heat up, add the chicken strips and stir fry till they look bit golden. Tip: do not over crowd the pan. If you do, the chicken will get wet and would not stir fry well.

To make pasta sauce with Alfredo sauce:

Ingredients


  • Diced 1 medium onion
  • Diced 4 Garlic Clove
  • Vertically sliced in to 4 strips 2 Green Chili (Long)
  • Vertically sliced Cherry Tomatoes, If cherry tomato is not available plump tomatoes will do
  • Full Cream Milk (100 ml)
  • 1 can of Prego Alfredo Mushroom Pasta Sauce
  • Powdered black pepper

Steps

For this step, you can use the pan that you used to stir fry the chicken without washing the pan so that we can use the left over juice from the stir fry. Spray some oil and heat up the pan to medium heat. Add the diced up onion and garlic. Stir fry till the onions are moist. Do not let the onions and garlic get burnt that this will ruin the taste of the sauce. Add in sliced tomato and chili. Sprinkle some powdered pepper. Stir fry for 10 seconds. Lower the heat. Add in the Alfredo sauce. Mix everything up. Once mixed, add in the milk just to thin the sauce. Lower the heat and stir till everything is mixed. Once mixed, the mixture should have a medium thick  consistency. Keep the pan aside.

To make fettuccine pasta:

Ingredients

  • Fettuccine pasta packet (the ones that look like flat ribbons). If this type is not available you can opt for any other type of pasta as well.
  • Salt and Oil.

Steps

Boil some water with a bit of oil and salt. Once boiled, add in fettuccine and boil till the fettuccine  is well done. To check whether the fettuccine is well done, throw a piece of it to the wall. If it sticks, its cooked as needed.Strain the fettuccine using  strainer. Put aside some water mixture left in the pot which will be used later.

Finally to mix it all:

Ingredient

  • Feta Cheese or Parmigiana cheese
  • Parsley
  • Pepper

Steps

Add in the fettuccine into the Alfredo sauce, add in the stir fried chicken and mix the mixture with care. Add in some cheese (grated or just crumble the cheese with your hand). Now add some left over pasta water or milk a bit if the mixture is a bit dry. Cut the parsley into small bits and add into the mixture. Mix everything up and it's ready to serve!

Note that the pasta will get dried up soon so it will be better to eat it while it's hot. I did have to add in some milk afterwards as we got to eat it a bit later. I love cold pasta as well as it gives a lovely comforting taste.

Cucumber

Lately I have noticed that we Maldivians use cucumber just to make salads. I mean, who in there right minds would ever 'only' use the refreshing cucumber in salads? This is one reason why I do not like my tradition as much as i should. It makes us lack from experiencing some really good qualities in things, unless otherwise, we be creative enough to use it in other ways or we learn from other good cultures. I myself use it to make one of my healthy omelettes! Yes it was delicious! The crunchy sound it makes when you bite it, and that watery taste it has brings neutrality to the dish. Cucumber i think is my favorite vegetable.
